Gluten Free Vegan Almond Cake
2 1/2 cups Bob's Red Mill Gluten Free Baking Mix
1/2 cup ground almonds or hazelnuts
2 tsp baking soda
2/3 cup olive oil
1 tsp sea salt
1 1/2 cups water
2 1/2 tsps vanilla extract (make sure it's certified gluten free)
1 tsp almond extract (gluten free)
1 1/2 cups maple syrup
Preheat oven to 375 degrees. Add all ingredients together and mix well. Grease bottom of baking pan (10 inch) and pour in batter. Bake for 35 minutes and then add fruit (I used strawberries) and sliced almonds on top. Continue baking for another 25 minutes. Insert knife into center of cake to check for doneness. It should come out clean. I had to bake it for an hour and 15 minutes in my oven. Before serving dust the top with powdered sugar. Yum!
